Hi, friends! I’m back this month from The Seasoned Mom to share a simple, healthy, and delicious recipe that is just perfect for the summer months. Like all of my favorite dishes, this Asian Cucumber Salad is 100% kid-approved!
Do you get tired of serving the same carrot sticks, peas, or iceberg lettuce salad with dinner each night? Or worse, are there some nights when you’re just not motivated enough to get any vegetables on the plates (um, I can relate)? Not good!
That’s why I love quick and easy side dishes like this one.
Last summer, when my garden was overflowing with cucumbers, my friend Margeaux shared one of her toddler’s favorite recipes with me. Margeaux’s Asian Cucumber Salad is simple, fast, and nutritious…making it an ideal vegetable option for those evenings when you just can’t get excited about any other green stuff. Plus, since her two-year-old Ian thought it was pretty darn good, I knew that my family would love it as well (and I was right)!
The few ingredients required for this recipe are all pantry staples in our house. That means that 99% of the time, I have everything on hand to throw this together at the last minute – no grocery store required. And that, my friends, is just one more reason to love the sweet, salty, tangy summer dish.
While it’s quick and easy enough for a weeknight dinner, this salad also looks and tastes fancy enough for a party! It’s the perfect complement to a piece of grilled fish and a cool, crisp contrast to a juicy hamburger. Whether it’s your new go-to side dish for your busy evenings or your next potluck picnic contribution, I guarantee that your friends and family will devour this salad!
- 2 English (seedless) cucumbers, thinly sliced (if using regular cucumbers, you need to peel them as well)
- ½ red onion, thinly sliced
- For the Dressing:
- ¼ cup seasoned rice vinegar
- 1 tablespoon sugar
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- Fresh dill, chopped (for garnish)
- Place cucumbers and red onion in a medium bowl.
- In a small bowl, whisk together vinegar, sugar, olive oil, salt, and pepper.
- Pour dressing over cucumber mixture and refrigerate at least 30 minutes before serving. Garnish with fresh dill.
