Easy Coffee Popsicle Recipe

Summer is officially here and I am enjoying the sunny days and more relaxed schedule.

We have been doing lots of pool play dates and my new favorite mom treat is coffee popsicles! Why should the kids get all the fun food?

If you are a regular reader (or have seen the title of my blog!) you know that I love coffee. I mean really, really love coffee.

I carry iced coffee around with me all day in the summer so knew coffee popsicles would be awesome, but my previous attempts at freezing coffee into popsicles never turned out right.

Until this summer…

Coffee Popsicle Recipe:

  • any flavor International Delight Iced Coffee (we used Mocha!)
  • chopped chocolate, mini marshmallows, chopped nuts (optional)
  • popsicle molds or popsicle maker

My original plan for the popsicles was to add more cream or pudding, but when we tried it we discovered that just freezing the iced coffee straight from the carton made the best popsicles.

International Delight also makes Cold Stone Creamery Sweet Cream and Hershey’s Cookies ‘n’ Creme Iced Coffee…it goes without saying those are great flavors for popsicles too!

Fill your popsicle molds or maker with the International Delight Iced Coffee and freeze. You can also leave a little space and add in mini-marshmallows, nuts or chocolate pieces. Use a small knife to push the toppings throughout the mold.

Once the popsicles are frozen just sit back and enjoy!

I recommend eating them poolside, but they are great anytime you need a caffeinated treat!
